Pulled Pork

Well, we are officially back from our vacation which means back to the blog. The husband's mom used to own a restaurant and is a great cook, so needless to say we were spoiled all of last week. Hopefully the husband can readjust to my cooking which doesn't hold a candle to my mother-in-laws.

Anyway, today I decided to make the pulled pork that's been chilling (literally!) in our fridge for awhile. This was incredibly easy and quick. Perfect since I had to work today.

Pulled Pork Sandwiches
prep:
under 30 minutes

Ingredients:

Pre-packaged pulled pork
Barbecue sauce
Bread

Directions:
Boil water and add the pulled pork in the bag in the boiling water. Let boil about 15 minutes, drain and open package into pot. Pull apart the pork with a fork and add your barbecue sauce.
Make into sandwiches, or use it for whatever really, tacos, nachos, anything!

The Verdict:
My experience-

This was really good and easy to make. I'm not sure how many different ways you can buy pulled pork but the one I got was from Costco and just very easy in a packaged bag with clear instructions.

Dinner is Served-

We both enjoyed this and it was super easy and quick. Four stars from us!

    Give this a try some time with pulled pork:

    Run 3 or 4 green tomatoes (red if you don't like green), about a 1/2 cup or so of chopped green onions (I like lots of green onions), some minced garlic, (its a taste thing, as much or as little as you like) 3 or 4 tablespoons of dried parsley (fresh is even better, use half as much), a couple cans of chopped green chilies, tablespoon or so of salt - run this all through the food processor or chopper. If you like life on the spicy side, you can add some jalapenos, with or without the seeds. After that's all chopped and blended, toss it in your crock pot, add some water until you get a nice, slightly light sauce and begin cooking. Keep adding water as you go along. Once you get up to temp, toss in your pulled pork. Let that for three or four hours.

    You can scale and batch the recipe and keep it frozen or in the fridge. I make a gallon or so at a time and eat it on most of my breakfast foods.

    Either make or buy some burritos or chimi's and cover in sauce and cheddar cheese and chow down! Yummy!
